Rich Madeira turkey gravy

PREPARATIO­N TIME 10 minutes COOKING TIME 30 minutes SERVES 6-8 INGREDIENT­S

● Golden Turkey roasting juices ● 1 litre vegetable stock ● 150ml Madeira ● 3 tbsp plain flour ● Sea salt and black pepper ● 2 tsp balsamic vinegar ● 1 tsp Marmite ● knob of butter

METHOD

1 Strain the juices from the roasting tray into a measuring jug and skim off most of the fat. Add vegetable stock to make the juices up to 1 litre of liquid and pour into a pan. Deglaze the roasting tray with the Madeira and strain into the saucepan .

2 Mix the flour to a paste with a little cold water and balsamic vinegar and whisk into the gravy. Season with salt and pepper. Bring to the boil, whisking all the time, and simmer for 20 minutes.

3 Whisk in the Marmite and butter. If the gravy is too thick, add a little more stock to serve.
