RICE SALAD WITH MIXED BERRIES AND GOAT’S CHEESE Serves 4 Quick to make and full of flavour, this vibrant salad is a showstoppe­r.

200g red quinoa, cooked 200g wild rice mix, cooked 100g red beet houmous 10g dill, roughly chopped 100g soft goat’s cheese, in pieces 100g blueberrie­s 100g red grapes, halved 50g blackberri­es

2 tbsp olive oil

2 tbsp balsamic vinegar Salt and pepper

50g toasted hazelnuts, roughly chopped

A few purple basil leaves

Mix the quinoa, wild rice and houmous in a bowl. Add in the dill, goat’s cheese, blueberrie­s, grapes and blackberri­es. Dress with a dash of olive oil and balsamic vinegar, and season with salt and pepper. Garnish with the hazelnuts and basil.
