RICE SALAD WITH MIXED BERRIES AND GOAT’S CHEESE Serves 4 Quick to make and full of flavour, this vibrant salad is a showstopper.
200g red quinoa, cooked 200g wild rice mix, cooked 100g red beet houmous 10g dill, roughly chopped 100g soft goat’s cheese, in pieces 100g blueberries 100g red grapes, halved 50g blackberries
2 tbsp olive oil
2 tbsp balsamic vinegar Salt and pepper
50g toasted hazelnuts, roughly chopped
A few purple basil leaves
Mix the quinoa, wild rice and houmous in a bowl. Add in the dill, goat’s cheese, blueberries, grapes and blackberries. Dress with a dash of olive oil and balsamic vinegar, and season with salt and pepper. Garnish with the hazelnuts and basil.
