RICE SALAD WITH MIXED BERRIES AND GOAT’S CHEESE Serves 4 Quick to make and full of flavour, this vi­brant salad is a show­stop­per.

200g red quinoa, cooked 200g wild rice mix, cooked 100g red beet hou­mous 10g dill, roughly chopped 100g soft goat’s cheese, in pieces 100g blue­ber­ries 100g red grapes, halved 50g black­ber­ries

2 tbsp olive oil

2 tbsp bal­samic vine­gar Salt and pep­per

50g toasted hazel­nuts, roughly chopped

A few pur­ple basil leaves

Mix the quinoa, wild rice and hou­mous in a bowl. Add in the dill, goat’s cheese, blue­ber­ries, grapes and black­ber­ries. Dress with a dash of olive oil and bal­samic vine­gar, and sea­son with salt and pep­per. Gar­nish with the hazel­nuts and basil.
