BLUEBERRY ICE CREAM Serves 8

Not just a warm weather treat – this dessert can be eaten in a cone or used to top a crumble or piece of pie.

500g blueberrie­s 120g sugar 2 tbsp lemon juice 8 ice cream cones

Purée the blueberrie­s with a handheld mixer, then push the pulp through a sieve.

Make a sugar syrup by dissolving the sugar in 200ml boiling water. Leave to cool slightly. Mix in the lemon juice and blueberry pulp.

Scoop the mixture into an ice-cream maker and let the machine run for about 40 minutes. Serve in ice cream cones.
