Cof­fee and wal­nut truf­fles

Some choco­late truf­fles are sweet and oth­ers – like these – are in­tensely rich and lux­u­ri­ous!

1½ tbsp in­stant cof­fee gran­ules 180ml dou­ble cream 200g plain choco­late, finely chopped

20g un­salted but­ter

100g wal­nuts, roughly ground (or finely chopped)

Place the cof­fee and cream in a small pan and heat gen­tly, stir­ring, un­til the cream just comes to the boil. Re­mov­ing from the heat, add the choco­late and but­ter and stir un­til melted and smooth. Pour into a shal­low bowl and

chill for 30 min­utes in the fridge, un­til set but still soft.

Place the ground or chopped wal­nuts on a plate. Shape the choco­late mix­ture into balls, then roll in the wal­nuts. Trans­fer the truf­fles to a tray and chill.
