Coffee and walnut truffles
Makes approx 30
Some chocolate truffles are sweet and others – like these – are intensely rich and luxurious!
1½ tbsp instant coffee granules 180ml double cream 200g plain chocolate, finely chopped
20g unsalted butter
100g walnuts, roughly ground (or finely chopped)
Place the coffee and cream in a small pan and heat gently, stirring, until the cream just comes to the boil. Removing from the heat, add the chocolate and butter and stir until melted and smooth. Pour into a shallow bowl and
chill for 30 minutes in the fridge, until set but still soft.
Place the ground or chopped walnuts on a plate. Shape the chocolate mixture into balls, then roll in the walnuts. Transfer the truffles to a tray and chill.
