These are so good and make the per­fect ac­com­pa­ni­ment to the Le­mon Thyme Gin.

500g mixed nuts 1 tsp sea salt 1 tsp cumin seeds 2 tsp fen­nel seeds ½ tsp dried chilli flakes 1 tsp dried oregano ½ tsp honey Pre­heat the oven to 180°C/fan 160°C/gas 4. Place the nuts on an oven tray and roast for 10 min­utes, stir­ring after 5. Sprin­kle with the salt, cumin, fen­nel, chilli flakes and oregano. Roast for an­other 5 min­utes, or un­til the nuts are golden and the aroma of the spices has been re­leased. Fold the honey through the nuts and set aside to cool. Pack­age in cel­lo­phane bags, tied with a rib­bon and gift la­bel.
