Pineap­ple and mint soda

‘This non-al­co­holic cocktail is a great choice for chil­dren or non-drinkers. You can al­ways add a splash of rum for an al­co­holic ver­sion.’

FOR 6 SERV­INGS ½ small, ripe pineap­ple Tin crushed pineap­ple in juice

4 limes, cut into quar­ters 3tbsp caster sugar

Two large hand­fuls of mint leaves

500ml soda wa­ter

Two large hand­fuls of ice

1 Peel and core the fresh pineap­ple and cut into small chunks. Empty the crushed pineap­ple into a jug with its juice. Squeeze the lime a lit­tle to loosen the juice and add to the pineap­ple. Stir in the sugar.

2 Add the mint leaves, pineap­ple chunks, soda wa­ter and ice. Di­vide into six glasses and en­joy!
