Christmas-spiced pecan popcorn
MAKES 2 BIG BOWLS
OF POPCORN
1tbsp vegetable oil 200g popping corn
150g butter
50g brown sugar
1tbsp ground cinnamon 1tbsp ground ginger 1tsp allspice
1tsp sea salt flakes 100g pecans
1 Preheat the oven to 180°C/ 160°C fan/gas mark 4. Heat the oil in a large pan with a tightly fitting lid over a medium heat. Add the popping corn, cover and leave to pop.
2 Meanwhile, melt butter in a pan. Stir in sugar, spices and salt. Once the corn has popped, spread out on a baking tray with the pecans and cover with the butter mixture. Mix together with your hands until well coated.
3 Bake for 10min until the sugar just starts to caramelise. When cool, serve in bowls.
