Sun-dried tomatoes
With their intense flavour, sun-dried tomatoes are great for providing an instant umami hit to dishes. Try to get the ones packed in oil for the best texture.
Make a punchy pasta sauce Slice up and add to gently fried garlic, parsley and any combination of capers, olives and anchovies along with some of the oil from the tomato jar. Stir through long pasta for a speedy supper.
Make pesto Blend a small clove of garlic with an entire jar of sun-dried tomatoes including the oil, a tablespoon of grated Parmesan and a handful of toasted pine nuts or hazelnuts. Glorious spread on sourdough toast.
Use in a sandwich The slightly sharp tomato hit is a welcome addition to a Cheddar option.
