Mixed nuts
Got a nut glut after the festive period? Here’s how to put them to good use... Make a dukkah Grind a handful of nuts with a pestle and mortar or spice grinder along with 1tbsp sesame seeds, 1tsp whole cumin seeds and coriander seeds, a large pinch of salt and a generous grind of black pepper. Add to salads, hummus, soups or anything that needs a bit of texture and spice.
Use in a DIY granola Mix nuts, rolled oats, a little salt, honey and coconut or olive oil then bake on a large baking sheet – cheaper and more delicious than the shop-bought version. Create epic popcorn Roast nuts on a baking sheet until browned. Add to popped popcorn with salt, brown sugar and cinnamon.
