Will people know if I’ve left them out?

No. If someone is not added to your close friends list, they’ll only be alerted to stories you’ve posted for general consumption. These will be circled pink and, as far as they’ll know, you may always be posting stories to all rather than a select few. There’s little danger of others blowing your cover either.
