Arty pepper focaccia

INGREDIENT­S ● 500G STRONG WHITE BREAD FLOUR ● 7G SACHET FAST-ACTION YEAST

● 3TBSP OLIVE OIL, PLUS EXTRA FOR GREASING ● 2TSP SEA SALT FOR THE DECORATION

● A SELECTION OF VEG SUCH AS RED ONION, PEPPERS, OLIVES ●

PARSLEY ● 2-3TBSP OLIVE OIL

● 1TSP SEA SALT FLAKES

YOU WILL NEED ● LARGE BAKING TRAY, LINED WITH BAKING PARCHMENT

1 Tip the flour into a bowl and stir in the yeast. Add 300ml lukewarm water, the olive oil and salt. Mix to form a dough. Knead on a lightly floured surface for 8-10 mins until smooth and elastic.

2 Put into an oiled bowl and cover with a little oil. Cover with cling film and leave in a warm place for 1-11/2 hrs until doubled in size.

3 Stretch the dough out to a 35x25cm rectangle on the tray and make deep dimples with your fingers. Arrange the vegetables and press them into the dough a little and brush over olive oil. Leave in a warm place for 20 mins.

4 Heat the oven to 200C/

Gas 6. Bake for 15 mins, then drizzle over a little more oil and bake for 20 mins more.

5 Serve warm, drizzled with olive oil and sea salt flakes.
