RECIPE : Christ­mas spiced red cab­bage

It’s al­ways a great at­mos­phere and this year Kent Life’s award­win­ning Food Hero Matthew Kearsey-Law­son (see also fea­ture on pages 40-41) will host lo­cal chefs on the cook­ing the­atre stage show­cas­ing fun and easy dishes for the fam­ily at Christ­mas and ideas for us­ing up left­overs.

Christ­mas kicks off at Pen­shurst Farm­ers’ Mar­ket this year with a mar­ket on 1 De­cem­ber and more than 35 stalls sell­ing ev­ery­thing from goose to rare breed beef or pork, prepped for roast­ing.

Christ­mas at the weekly Hilden­bor­ough mar­ket run on Tues­days started with ‘Taster Days’ in Novem­ber, where stall­hold­ers give sam­ples and take or­ders for pick up in mid-De­cem­ber.

Mananger Julie Kury says:

“We look for­ward to the re­turn of our three school choirs who will en­ter­tain us with tra­di­tional and very mod­ern Christ­mas mu­sic.

“This takes place each week up to our fi­nal event on 18 De­cem­ber, when we of­fer free mulled wine and mince pies for ev­ery­one and en­joy a very pop­u­lar visit from Santa.”

Fa­ther Christ­mas will also make an ap­pear­ance at Cliftonville Farm­ers’ Mar­ket near Mar­gate, says This old favourite can be served hot or cold, gets bet­ter when left to ma­ture for a day or two, goes with all kinds of dishes, and ev­ery­one loves it. Serve with the main event on Christ­mas Day but make enough for left­overs to go with cold meats on Box­ing Day

1 tbsp lo­cal rape­seed oil

1 large onion, sliced

1 tsp ground co­rian­der, ½ tsp ground cin­na­mon, ¼ tsp freshly grated nut­meg

750g red cab­bage, shred­ded 1 large eat­ing ap­ple, cored and chopped

2 tbsp soft brown sugar

5 tbsp red wine vine­gar

4 tbsp cran­berry or red­cur­rant jelly man­ager June Chad­band “We will be play­ing sea­sonal mu­sic from the band­stand and Fa­ther Christ­mas will be hand­ing out choco­lates to the shop­pers and wish­ing ev­ery­one a very happy Christ­mas!”

Cran­brook Farm­ers’ Mar­ket is run by Jane Apps of ve­gan and veg­e­tar­ian food com­pany The Fat Car­rot. She says: “This year we have a very busy mar­ket planned with ex­tra art craft stalls booked in. It’s held in the at­mo­spheric Vestry Hall and stalls will be sell­ing honey, juices and al­paca knits.”

Stall­hold­ers at the Tun­bridge Wells (Town Hall) Farm­ers’ Mar­ket al­ways get into spirit of Christ­mas,


• Heat the oil in a large heavy pan, add the onion and cook for three min­utes un­til soft­ened. Stir in the spices and cook for an­other minute.

• Add the shred­ded cab­bage and stir to coat in the spices then stir in the ap­ple, sugar, vine­gar and four tbsp cold wa­ter.

• Sea­son with salt and pep­per and bring to the boil, then cover and sim­mer very gen­tly for one and a half to two hours, stir­ring oc­ca­sion­ally, un­til re­ally ten­der and the liq­uid has evap­o­rated. Stir in the jelly and serve ei­ther hot or cold.

• The clas­sic sweet and sour flavours go won­der­fully with all rich meats so serve with dress­ing up and dec­o­rat­ing their stalls. A choir sings car­ols through­out the mar­ket.

This year Ship­bourne vil­lage farm­ers’ mar­ket will be held on 13 De­cem­ber with car­ols sung in and out­side the church by pupils from Ship­bourne Pri­mary School. Mar­ket man­ager Bob Tay­lor and his team will be cel­e­brat­ing win­ning ‘Best Farm­ers’ Mar­ket’ at Kent Life’s Food & Drink Awards.

An­other fi­nal­ist in this year’s awards was Capel-Le-Ferne just out­side Folke­stone.

Led by Deb­o­rah Oven­don it’s very much a com­mu­nity minded Farm­ers’ Mar­ket and cus­tomers will see mulled wine and mince pies on of­fer from the mar­ket’s com­mu­nity café.

Fes­tive-themed Farm­ers’ Mar­kets right across Kent of­fer a fo­cus for peo­ple liv­ing in the vil­lages and towns to gather to­gether and share a spe­cial time, while at the same time buy­ing fresh, flavour­ful pro­duce and sup­port­ing lo­cal busi­nesses in their com­mu­nity.
