RECIPE : Christmas spiced red cabbage
love getting into the Christmas spirit, offering attractively packaged seasonal produce and decorating their stalls.
It’s always a great atmosphere and this year Kent Life’s awardwinning Food Hero Matthew Kearsey-Lawson (see also feature on pages 40-41) will host local chefs on the cooking theatre stage showcasing fun and easy dishes for the family at Christmas and ideas for using up leftovers.
Christmas kicks off at Penshurst Farmers’ Market this year with a market on 1 December and more than 35 stalls selling everything from goose to rare breed beef or pork, prepped for roasting.
Christmas at the weekly Hildenborough market run on Tuesdays started with ‘Taster Days’ in November, where stallholders give samples and take orders for pick up in mid-December.
Mananger Julie Kury says:
“We look forward to the return of our three school choirs who will entertain us with traditional and very modern Christmas music.
“This takes place each week up to our final event on 18 December, when we offer free mulled wine and mince pies for everyone and enjoy a very popular visit from Santa.”
Father Christmas will also make an appearance at Cliftonville Farmers’ Market near Margate, says This old favourite can be served hot or cold, gets better when left to mature for a day or two, goes with all kinds of dishes, and everyone loves it. Serve with the main event on Christmas Day but make enough for leftovers to go with cold meats on Boxing Day
1 tbsp local rapeseed oil
1 large onion, sliced
1 tsp ground coriander, ½ tsp ground cinnamon, ¼ tsp freshly grated nutmeg
750g red cabbage, shredded 1 large eating apple, cored and chopped
2 tbsp soft brown sugar
5 tbsp red wine vinegar

Cranbrook Farmers’ Market is run by Jane Apps of vegan and vegetarian food company The Fat Carrot. She says: “This year we have a very busy market planned with extra art craft stalls booked in. It’s held in the atmospheric Vestry Hall and stalls will be selling honey, juices and alpaca knits.”
Stallholders at the Tunbridge Wells (Town Hall) Farmers’ Market always get into spirit of Christmas,
• Heat the oil in a large heavy pan, add the onion and cook for three minutes until softened. Stir in the spices and cook for another minute.
• Add the shredded cabbage and stir to coat in the spices then stir in the apple, sugar, vinegar and four tbsp cold water.
• Season with salt and pepper and bring to the boil, then cover and simmer very gently for one and a half to two hours, stirring occasionally, until really tender and the liquid has evaporated. Stir in the jelly and serve either hot or cold.
• The classic sweet and sour flavours go wonderfully with all rich meats so serve with dressing up and decorating their stalls. A choir sings carols throughout the market.
This year Shipbourne village farmers’ market will be held on 13 December with carols sung in and outside the church by pupils from Shipbourne Primary School. Market manager Bob Taylor and his team will be celebrating winning ‘Best Farmers’ Market’ at Kent Life’s Food & Drink Awards.
Another finalist in this year’s awards was Capel-Le-Ferne just outside Folkestone.
Led by Deborah Ovendon it’s very much a community minded Farmers’ Market and customers will see mulled wine and mince pies on offer from the market’s community café.
Festive-themed Farmers’ Markets right across Kent offer a focus for people living in the villages and towns to gather together and share a special time, while at the same time buying fresh, flavourful produce and supporting local businesses in their community.
