The par t-travelogue, par tcookery show format is a simple recipe to follow – take one chef, immerse in a sunny location and simmer for six weeks. So it’s true that this latest adventure from seafood chef Stein is hardly original, however it’s cer tainly a joy to watch. This week, he’s in Madurai in Tamil Nadu, where he learns the ar t of temple cooking, and samples local dish sambar. Before too long he’s back on the road again, heading across the Western Ghats to the state of Kerala to prepare a regional desser t, payasam, and pick up tips for a traditiona­l pork curr y.
