Chris’s pas­sion for fish, and for hard work, has in­spired his daugh­ter Joyce­lyn Neve, man­ag­ing di­rec­tor of The Seafood Pub Com­pany with 11 gas­trop­ubs across Lan­cashire and now York­shire. ‘I grew up around the food busi­ness and ca­ter­ing, I re­mem­ber going to din­ner at a school­friend’s and won­der­ing what was going on as no­body was at the sink clean­ing mus­sels or fish,’ she re­calls. ‘Going out on de­liv­er­ies with dad was ex­cit­ing, into the kitchens and see­ing what was going on. I was al­ways in­volved in the prep­ping – clean­ing mus­sels, shuck­ing oys­ters and scal­lops. In my first job if we had chefs not work­ing quickly enough for ser­vice I’d move them out of the way and take over.

‘The thing about fish is you can really tell by sight how good it will be, whereas with meat something that looks great may cook up tough or lack flavour – that doesn’t hap­pen with good fresh fish.’
