Imperial colour
At its best now, purple sprouting broccoli brings rich colour to the spring table. This cruciferous plant contains the phytochemical sulforaphane, which has powerful antioxidant properties. It also contains high levels of vitamin C and is a good source of iron, carotenoids, folic acid, calcium, fibre and vitamin A. When buying purple sprouting broccoli, dark greeny-purple coloured stems which appear fresh and firm are chosen. Spears should snap cleanly. Any which bend are discarded, as are those with yellow florets or wilted leaves. The leaves are edible and do not need removing before the purple sprouting broccoli is cooked.
