Broad bean bites
Makes approx. 300g 300g shelled broad beans 2 egg whites 50g plain flour 25g brown sugar 1 tsp garlic granules 1 tbsp olive oil 1 tsp turmeric 1 tsp paprika salt and black pepper
Preheat oven to 160°C/gas mark 3. In a large bowl, whisk the egg whites until soft peaks form. Fold in the plain flour, sugar, garlic and oil, then add the beans and coat thoroughly by mixing with a spoon. Season with salt and pepper. Transfer two-thirds of the mixture to two separate bowls, equally. Add the turmeric to one and the paprika to another. Mix each thoroughly. Line a large baking tray with greaseproof paper, then drop each bean on to the tray individually. Bake in the preheated oven for 30 mins, until crisp. Allow to cool, then serve in a bowl as snacks.
