Broad bean bites

Makes approx. 300g 300g shelled broad beans 2 egg whites 50g plain flour 25g brown sugar 1 tsp garlic granules 1 tbsp olive oil 1 tsp turmeric 1 tsp paprika salt and black pepper

Preheat oven to 160°C/gas mark 3. In a large bowl, whisk the egg whites until soft peaks form. Fold in the plain flour, sugar, garlic and oil, then add the beans and coat thoroughly by mixing with a spoon. Season with salt and pepper. Transfer two-thirds of the mixture to two separate bowls, equally. Add the turmeric to one and the paprika to another. Mix each thoroughly. Line a large baking tray with greaseproo­f paper, then drop each bean on to the tray individual­ly. Bake in the preheated oven for 30 mins, until crisp. Allow to cool, then serve in a bowl as snacks.
