Baked lavender goat’s cheese

Preheat the oven to 200°C/gas mark 6. Cut out three A4-size pieces of greaseproo­f paper. Place a goat’s cheese round in the middle of each. Make three small criss-cross cuts into the top of each cheese. Open up the cheeses slightly to sprinkle in 1 tsp of the lavender into each. Drizzle each cheese with half of the oil and season with the pepper. Wrap each up into a parcel by folding in the two long sides, rolling them up loosely, then folding in the other sides in the same way. Place on a baking tray and bake for 15 mins. Meanwhile, slice the baguette into thin slices and place on a tray to grill. Sprinkle with the remaining olive oil and sprinkle with salt. Grill for 1-2 mins on each side until golden. Place the parcels on a sharing platter, unfold and arrange the bread around them, then serve.
