Sugared almonds

Preheat the oven to 200°C/gas mark 6. Place the almonds on an oven tray and dry roast for 15 mins until golden. Turn them over with a fish slice every 5 mins. In a clean glass bowl, whisk the egg white with an electric whisk for 2 mins, until there are soft peaks. Gradually add the sugar, a spoonful at a time, while slowly whisking. While hot, add the almonds to the bowl, to coat with the sugar and egg mixture. Remove the almonds with a teaspoon and place on an oven tray, lined with baking paper. Allow to cool completely, then serve.
