COMFORTING CAULIFLOWE­R MASH

Regarded as a superfood, the humble cauliflowe­r is full of goodness, containing vitamins C, K and B6. Rich in potassium and sulphur, which can help boost the immune system, it makes an ideal choice for the season of coughs and colds. Cauliflowe­r mash can be a welcome potato alternativ­e to accompany a winter supper, providing comfort in a bowl. sauté 1 sliced onion and 1 crushed garlic clove in a large pan with 1 tbsp olive oil over a low to medium heat until softened. Add 1 cauliflowe­r, finely chopped, and ¼ cup of vegetable stock. Cover with a tight-fitting lid and turn down the heat to a low simmer. Cook for 5-10 minutes, stirring halfway through and checking to make sure there is still enough liquid to steam the cauliflowe­r. It is important not to overcook it to keep the fresh flavour intact. Remove from the heat and season with a little sea salt and white pepper. Blend until smooth and creamy. Serve with a knob of butter and chopped chives to garnish.
