Stilton and broccoli soup

Transfer the broccoli pieces to a large saucepan and cover with 1 litre boiling water. Bring to the boil and simmer for 10 mins. Drain, reserving the water, and transfer the broccoli to a plate. Return the saucepan to the heat and add the butter. Fry the onion for 5 mins, then add the broccoli and reserved cooking water. Bring to the boil, then crumble in 100g of the Stilton and season with lots of black pepper. Cook for 10 mins, stirring. Allow to cool slightly, then stir in the cream and mix with a hand blender until smooth. Place the remaining Stilton in the microwave for 30 secs, until melted, and stir until smooth. Swirl into the soup, then divide between bowls. Serve, garnished with black pepper and parsley.
