Used in salads since the first Elizabethan era, rocket has a strong, peppery flavour. Easy to grow, it is quick to germinate and flourish, coming into season from April. Younger leaves are milder in flavour, being more tender. Eaten raw or cooked as a spinach alternative, rocket is rich in potassium and vitamin C.
