Welsh dripping cake

Preheat the oven to 180°C/gas mark 4. Grease and line a 20cm cake tin. Mix the dripping and sugar together thoroughly in a large bowl. Beat in the eggs, then mix in the plain flour, baking powder, cinnamon and nutmeg. Mix in the currants and stir in the milk until the ingredient­s are thoroughly combined. Pour the mixture into the prepared tin and bake for 1 hr, until an inserted knife comes out clean. Allow to cool slightly, then turn out onto a plate and dust with icing sugar. Serve warm or cooled.
