Welsh dripping cake
Preheat the oven to 180°C/gas mark 4. Grease and line a 20cm cake tin. Mix the dripping and sugar together thoroughly in a large bowl. Beat in the eggs, then mix in the plain flour, baking powder, cinnamon and nutmeg. Mix in the currants and stir in the milk until the ingredients are thoroughly combined. Pour the mixture into the prepared tin and bake for 1 hr, until an inserted knife comes out clean. Allow to cool slightly, then turn out onto a plate and dust with icing sugar. Serve warm or cooled.
