Used in sal­ads since the first El­iz­a­bethan era, rocket has a strong, pep­pery flavour. Easy to grow, it is quick to ger­mi­nate and flour­ish, com­ing into sea­son from April. Younger leaves are milder in flavour, be­ing more ten­der. Eaten raw or cooked as a spinach al­ter­na­tive, rocket is rich in potas­sium and vi­ta­min C.
