Taste of spring
Lettuce quickly absorbs flavours during cooking, making it an ideal addition to braised spring greens. For three people, melt 15g butter in a pan over a low-medium heat, add 1 small leek, thinly sliced, and sauté for 2 mins to soften. Add small segments of lettuce and cook for 1 min, until it starts to wilt. Add 300g peas, 100ml of water, and season with black pepper. Simmer and stir for approximately 3 mins, until half the liquid has evaporated. Dot with more butter, sprinkle with chopped mint, and serve.
