Care should be taken when melting white chocolate because it can turn lumpy or grainy as well as scorching easily. It is recommended to melt it in a bowl placed over a saucepan of warm water, stirring regularly. If the chocolate does turn lumpy, it can be rescued by adding approximately 1 tbsp of vegetable oil to 6oz chocolate in small amounts and stirring gently until it regains its normal consistency.
