MELT­ING WHITE CHOCO­LATE

Care should be taken when melt­ing white choco­late be­cause it can turn lumpy or grainy as well as scorch­ing eas­ily. It is rec­om­mended to melt it in a bowl placed over a saucepan of warm wa­ter, stir­ring reg­u­larly. If the choco­late does turn lumpy, it can be res­cued by adding ap­prox­i­mately 1 tbsp of veg­etable oil to 6oz choco­late in small amounts and stir­ring gen­tly un­til it re­gains its nor­mal con­sis­tency.
