May was known by the Anglo-Saxons as ‘the month of three milkings’. There was such an abundance of fresh spring grass for the cows to eat that they needed to be milked three times a day. May Day celebratio­ns included a plenitude of dairy-based foods, such as milky puddings, creamy desserts and even cheesecake­s.
