A soothing cup of tea

Chamomile flowers can be used to make tea. A cup before bedtime has a calming effect on the nervous system, leading to an improved night’s sleep. Chamomile also has anti-inflammato­ry properties, and the tea can aid digestion and soothe mouth ulcers and irritated gums. Fresh or dried flowers may be used, although fresh ones produce a slightly sweeter drink. One dessert spoonful per cup is added to boiling water and left to steep for 3-4 mins before being strained and served. Sugar may be added if desired. It is advised to cover the tea while it brews, as some of the beneficial properties of the flowers may be lost in the steam.
