Stove-top sausage and beans

Serves 4

550g sausages

2 x 400g tin hari­cot beans, rinsed and drained 1 tbsp olive oil

1 large onion, peeled and sliced

1 gar­lic clove, peeled and sliced

1 red chilli, de­seeded and chopped

2 tbsp corn­flour

250ml wa­ter

1 tbsp chopped flat leaf pars­ley sea salt and white pep­per mus­tard, to serve

Pour the oil into a large saucepan and heat on the stove un­til siz­zling. Add the sausages and onion, and brown, turn­ing oc­ca­sion­ally, for 6-8 mins. Stir in the gar­lic, chilli, beans and corn­flour, and sea­son with salt and pep­per. Pour in 250ml of wa­ter. Bring to the boil, then cover with a lid and cook for 15-20 mins un­til the sauce is thick and the in­gre­di­ents are pip­ing hot. Stir in the pars­ley and serve with mus­tard.
