Stove-top sausage and beans

Serves 4

550g sausages

2 x 400g tin haricot beans, rinsed and drained 1 tbsp olive oil

1 large onion, peeled and sliced

1 garlic clove, peeled and sliced

1 red chilli, deseeded and chopped

2 tbsp cornflour

250ml water

1 tbsp chopped flat leaf parsley sea salt and white pepper mustard, to serve

Pour the oil into a large saucepan and heat on the stove until sizzling. Add the sausages and onion, and brown, turning occasional­ly, for 6-8 mins. Stir in the garlic, chilli, beans and cornflour, and season with salt and pepper. Pour in 250ml of water. Bring to the boil, then cover with a lid and cook for 15-20 mins until the sauce is thick and the ingredient­s are piping hot. Stir in the parsley and serve with mustard.
