Cod one-pot

Serves 4

4 cod loins

750g Maris Piper pota­toes, peeled and chopped into ap­prox­i­mately

3cm cubes

400g broc­coli, bro­ken into small flo­rets

1 le­mon 500ml wa­ter

1 gar­lic clove, peeled and crushed

1 tbsp olive oil

2 tbsp chopped pars­ley, plus ex­tra to gar­nish

2 tbsp chopped oregano, plus ex­tra to gar­nish sea salt and black pep­per

Place the potato cubes in a large oven­proof casse­role dish, then add the broc­coli flo­rets. Grate in the le­mon zest, then quar­ter the le­mon and add to the pot, along with the gar­lic. Boil the 500ml of wa­ter and pour over un­til it cov­ers the potato layer. Sea­son with salt and pep­per, and place the cod on top. Driz­zle over the olive oil. Sprin­kle with the herbs and cover with a lid. Bring to a sim­mer and con­tinue sim­mer­ing for 20 mins un­til the fish is cooked through­out and the pota­toes are soft. Di­vide be­tween four serv­ing plates, gar­nish with the ex­tra herbs, and serve.
