Crispy potato bake

1.5kg baby potatoes, very thinly sliced 60g salted butter 60ml olive oil 4 sprigs each, rosemary and thyme sea salt and black pepper Preheat the oven to 220°C/gas mark 7. Position the potato slices within a large roasting tin, side by side. In a jug, melt the butter in the microwave for 30 secs until liquid, then add the oil. Pour over the potatoes evenly, then season with salt and pepper. Bake for 20 mins. Add the rosemary and thyme to the tin and roast for a further 20 mins until golden. Serve immediatel­y.
