Glazed carrots
Serves 8
1kg small carrots, peeled 230ml sweet white wine 20g honey juice of 1 orange 1 tbsp pink peppercorns sea salt and black pepper In a shallow saucepan, combine the wine, honey and orange juice. Season with salt and pepper, and the pink peppercorns. Bring to the boil, then add the carrots, cover with a lid and turn down to a simmer. Cook for 15 mins, then transfer to a serving dish.
