Choco­late cranachan

Serves 4 200g jumbo oats 2 tbsp dark soft brown sugar 225g dark choco­late, at least 70 per cent co­coa, plus ex­tra for dec­o­rat­ing 250g cot­tage cheese 150ml dou­ble cream Heat a saucepan on the hob, then add the oats and dry fry, stir­ring reg­u­larly, for 4 mins un­til browned. Take off the heat and mix in the sugar. In a large bowl, melt the choco­late in the mi­crowave for 1 min. Stir un­til smooth, then add the oats and mix thor­oughly. Set aside. In a sep­a­rate bowl, com­bine the cot­tage cheese and dou­ble cream and whisk for 1-2 mins un­til smooth and thick. Layer the choco­late oats and cream mix­ture equally In four serv­ing glasses, to cre­ate four lay­ers. Dec­o­rate with pieces of bro­ken choco­late. Serve im­me­di­ately.
