Oat rhubarb crumbles

100g jumbo oats 500g rhubarb, trimmed and chopped into 1cm pieces 300g apples, cored and finely chopped 1 lemon 100g caster sugar 100ml water 2 star anise 60g dark brown sugar 100g plain flour 100g chilled butter, cubed, plus extra for greasing sea salt Preheat the oven to 180°C/gas mark 4. In a large saucepan, combine the rhubarb and apple, zest over the rind of the lemon and add half of its juice. Mix in the caster sugar, a pinch of salt, 100ml water and the star anise. Simmer for 2 mins, then cook on a medium heat, stirring occasionally, for 5 mins. In a large mixing bowl, combine the oats, brown sugar and plain flour, then add the cubed butter. Rub the butter into the dry ingredients until the mixture resembles breadcrumbs. Grease six individual pie dishes with butter. Divide the fruit mixture between the dishes and top with an even covering of the oat mixture. Bake for 20 mins until golden and bubbling, then serve immediately.
