Earthy treasures
The autumn truffle, Tuber uncinatum, is now approaching the end of its season. The heady scent and rich flavour of the black truffle can be intoxicating, despite its odd appearance. Mainly found in Italy and France, truffles can also be foraged in areas of the UK, particularly the South West. The fungus grows underground, in a mycorrhizal relationship with tree roots, and is extremely difficult to cultivate as it is hard to predict where the fruiting bodies will grow. If bought whole, they should be eaten within a few days. Serving raw helps to maintain their aroma, and they can be cut or shaved over a variety of dishes, pairing exceptionally well with eggs.
