Sticky lemon and mustard salmon side

600g side of salmon 5 lemons 2 tbsp honey 2 tbsp wholegrain mustard 4 tbsp chopped flat-leaf parsley 1 tbsp olive oil sea salt and black pepper Preheat the oven to 190°C/gas mark 5. Slice 4 of the lemons very finely and line a large oven tray with them. Zest and juice the remaining lemon into a small bowl and add the honey, mustard, parsley and oil. Season with the salt and pepper and stir thoroughly. Place the salmon, skin-side down, on top of the sliced lemons, then coat the fish with the honey mixture. Roast for 25 mins until it flakes easily and is cooked through completely. Serve immediatel­y or allow to cool, then served chilled.
