Rose, lemon and vanilla buns

Makes 12 500g strong flour, plus extra for dusting 50g caster sugar 14g fast-action yeast 130ml milk 20g butter, plus extra for greasing 1 egg 240g icing sugar ½ tsp rose essence ¼ tsp red food colouring ½ tsp vanilla essence ½ tsp purple food colouring 1 tsp lemon juice ½ tsp yellow food colouring 25 x 35cm oven tray In a large bowl, combine the flour and caster sugar, then make a well in the middle of the mix and add the yeast. In a plastic jug, measure out the milk and add the butter, then warm in the microwave for 1 min until room temperatur­e. Whisk the egg into the milk mixture. Pour the mixture into the well and mix together using a wooden spoon, in a figure of eight motion, pouring in 160ml warm water until the dough comes together. On a clean surface dusted with flour, knead the dough for 10 mins by folding it into itself and pushing down using the fist. Place the dough in a clean large bowl and cover with cling film greased with butter. Leave to stand in a warm place to prove for 1 hr until it has doubled in size. Grease the oven tray liberally. Knock the air out of the dough with one strike of the fist, then separate it into 12 equal pieces. Roll each piece into a short sausage shape and place side by side in the prepared tray. Cover loosely with greased cling film and leave in a warm place to prove for 40 mins. During this time, preheat the oven to 200°C/gas mark 6 then bake the buns for 10-15 mins until risen and golden. Remove and allow to cool completely. Divide the icing sugar between three small bowls. Add the rose essence, red food colouring and 3 tsp cold water to one bowl and mix thoroughly. Ice four of the buns with the icing down the middle of the bun using a dessert spoon. Add the vanilla essence, purple food colouring and 3 tsp cold water to another of the bowls of icing and ice four more of the buns in the same way. Finally, add the lemon juice, yellow food colouring and 2½ tsp cold water to the remaining bowl and ice the remaining buns. Allow to set before serving.
