Sum­mer fruit crum­ble

Serves 4

225g plain flour

135g de­mer­ara su­gar

85g por­ridge oats

110g but­ter, chopped into rough chunks 300g sum­mer berries

Pre­heat the oven to 180°C/gas mark 4. In a bowl, mix the flour, su­gar and oats to­gether un­til evenly blended, then add the but­ter. Rub to­gether with the fin­ger­tips un­til the mix­ture has the con­sis­tency of bread­crumbs. Re­move any stones from the fruit and cook in a pan over a medium heat un­til they be­gin to soften, ap­prox­i­mately 5 mins, de­pend­ing on ripeness. Pour the fruit in an oven­proof bowl and top with the crum­ble mix. Place the bowl in the oven and cook for ap­prox­i­mately 20 mins un­til the juice begins to bub­ble round the sides of the bowl.

Serve with cream or ice cream.
