The lacy white florets of elderflowe­rs bloom from late May, emitting an elegant fragrance that can be used to make refreshing cordials and wines. This light, aromatic elderflowe­r wine is made from hand-picked blossoms growing on the Sidlaw Hills in Scotland. The flowers are pressed and combined with fresh ingredient­s, which are then fermented using traditiona­l techniques. Winemakers Ron and Judith Gillies produce berry and oak leaf wines, and fruity ciders made with apples, pears and plums from orchards around the Carse of Gowrie.
