Battered spring onions
Makes 10
10 spring onions, trimmed and halved lengthways 90g plain flour 40g cornflour 1 tsp bicarbonate of soda 1 tsp baking powder 150ml sparkling water 2 ice cubes rapeseed oil, for frying sour cream, to serve In a large mixing bowl, combine the flour, cornflour, bicarbonate of soda and baking powder, then whisk in the sparkling water and ice cubes. Leave to stand for 10 mins. Fill two-thirds of a large saucepan with the oil, then heat on medium until sizzling. Using tongs, dip a spring onion into the batter, then place it in the oil. Fry for 2½ mins, then remove with tongs and place on a plate lined with kitchen paper. Repeat with the remaining onions. Serve immediately with the sour cream as a dip.
