Creamy kale with whole-grain mustard

Serves 6

1 onion, peeled and finely sliced 3 tbsp olive oil 500g kale, chopped 150g double cream 2 tbsp whole-grain mustard 1 tbsp honey sea salt and black pepper

Preheat the oven to 200°C/180°C fan/gas mark 6. Place the sliced onion on a baking tray, then drizzle with 1 tbsp of olive oil. Season with salt. Bake for 10-12 mins until crispy, then set aside.

Add the remaining oil to a large frying pan, then add the kale and cook, covered and stirring occasional­ly, for 5-6 mins until soft. This may have to be done in batches, depending on the size of the pan. Add the cream, mustard and honey, then season with salt and pepper. Stir, add 2 tbsp of boiling water, and cook, covered, for 5 mins. Stir the crispy onions into the kale and serve.
