Boozy mushrooms

3 tbsp unsalted butter 600g mushrooms, trimmed 2 garlic cloves, peeled and finely chopped 4 tbsp sherry 2 tbsp chopped flat-leaf parsley sea salt and black pepper

In a large saucepan, melt the butter and add the mushrooms and garlic. Cook, stirring occasional­ly, on a low heat for 6-8 mins until the mushrooms are golden. Pour in the sherry and cook for 2 mins. Stir in the parsley and season with salt and pepper, then serve.
