Stilton potatoes

unsalted butter, for greasing 1.5kg Charlotte potatoes, finely sliced 200g Stilton 2 tbsp chopped fresh curly parsley, plus sprigs to garnish 100g single cream black pepper

Preheat the oven to 200°C/180°C fan/gas mark 6 and grease a large oven dish. Place the potatoes in a large saucepan and cover with cold water. Bring to the boil, then simmer for 5 mins. Drain and refresh in cold water, then drain again. Layer the prepared dish with a third of the potatoes, then crumble over a third of the Stilton and a third of the parsley. Season with pepper. Layer half the remaining potatoes, Stilton and parsley, then repeat with the remaining ingredient­s. Season with pepper, then pour over the single cream. Bake for 20-25 mins until the potatoes are golden and the cheese has melted. Serve.
