Stilton potatoes
Serves 6
unsalted butter, for greasing 1.5kg Charlotte potatoes, finely sliced 200g Stilton 2 tbsp chopped fresh curly parsley, plus sprigs to garnish 100g single cream black pepper
Preheat the oven to 200°C/180°C fan/gas mark 6 and grease a large oven dish. Place the potatoes in a large saucepan and cover with cold water. Bring to the boil, then simmer for 5 mins. Drain and refresh in cold water, then drain again. Layer the prepared dish with a third of the potatoes, then crumble over a third of the Stilton and a third of the parsley. Season with pepper. Layer half the remaining potatoes, Stilton and parsley, then repeat with the remaining ingredients. Season with pepper, then pour over the single cream. Bake for 20-25 mins until the potatoes are golden and the cheese has melted. Serve.
