Blackberry fizz
Serves 6
200g blackberries 40g caster sugar juice of 1 lemon 1 tsp cinnamon 50ml cold water 750ml sparkling wine, chilled
Place the blackberries, caster sugar, lemon juice and cinnamon in a saucepan with the water and simmer for 5 mins until the sugar dissolves. Bring to the boil, then simmer for 10 mins until thick. Allow to cool slightly.
Push the mixture through a fine sieve into a jug and allow to cool. Divide the mixture between 6 glasses, carefully top up with the sparkling wine, and serve.
