White chocolate & lemon sharing pots
Serves 8
80g unsalted butter, plus extra for greasing 150g caster sugar pinch of salt
2 eggs
100g white chocolate, chopped into small pieces, plus
40g to decorate
2 lemons
180g plain flour
1 tsp baking powder 120ml milk
1 tbsp cornflour
4 x 250ml ovenproof sharing dishes
Preheat the oven to 180°C/160°C fan/gas mark 4 and grease the sharing dishes. In a large mixing bowl, whisk together the butter and 120g of the caster sugar for 2-3 mins until creamy. Mix in the salt, then beat in the eggs one at a time.
Add the chopped white chocolate and mix into the batter, then zest the 2 lemons into the mixture. Sift in the plain flour and baking powder, then fold into the mixture. Stir in the milk thoroughly and divide the mixture between the greased dishes.
Squeeze the juice of the lemons into a jug and stir in the cornflour and remaining sugar. Slowly mix in 125ml of boiling water. Pour the lemon water in equal measures onto each pudding.
Bake for 20-25 mins until the tops are golden. Allow to cool for 10 mins, then melt the 40g of white chocolate in a microwaveable bowl in the microwave for ½ min and drizzle over the puddings in a zig-zag motion. Each pudding will serve 2 people sharing.
