Mint choc chip
Makes 4 65g dark chocolate 65g unsalted butter 2 eggs 45g caster sugar 35g plain flour 1 tbsp cocoa powder ½ tsp baking powder 60g chocolate chips 1 tbsp mint essence fresh mint, to garnish 4 x 100g ramekins
Break the chocolate up into a microwaveable bowl and add the butter. Melt in the microwave for ½-1 min, then stir until smooth.
In a large bowl, whisk together the eggs and sugar, using an electric whisk, for 2-3 mins until double in volume. Stir in the chocolate mixture, then sift in the flour, cocoa powder and baking powder. Mix in the chocolate chips and mint essence. Divide equally between the ramekins, then leave to chill for 1 hr.
Preheat the oven to 210°C/190°C fan/gas mark 6½. Place the ramekins on an oven tray and bake for 8½ mins until the tops have risen and cracked. Allow to cool slightly, then serve, garnished with fresh mint.
