Full English bake

Serves 4

400g brown bread

400g tin chopped tomatoes

100g button mushrooms, quartered

6 sausages

4 eggs

2 tbsp chopped curly parsley, to garnish sea salt and black pepper large, high-sided baking tin baking paper

Preheat the oven to 180°C/160°C fan/gas mark 4 and line the baking tin with baking paper. Roughly slice the bread thickly, then break up into hand-sized pieces. Arrange the bread in the prepared tray in a single layer. Pour over the tin of chopped tomatoes, then fill the tin halfway with cold water, swill the water in the tin and pour to cover the bread.

Dot over the button mushrooms, then arrange the sausages evenly across the bake. Make four slight and spaced-out indents in the bake using the back of a mixing spoon for the eggs to be cracked into, then crack in the eggs. Season with salt and pepper, then bake for 20 mins until the eggs are set.

Sprinkle with parsley and serve immediatel­y.
