Spinach & tomato toad in the hole
Serves 2
4 tsp rapeseed oil
40g spinach
1 large tomato
4 sausages
1 tbsp Worcester sauce
100g plain flour
100ml milk
2 eggs black pepper
4-hole Yorkshire pudding tray
Preheat the oven to 200°C/180°C fan/gas mark 6 and grease the pudding tray with 1 tsp of oil in each hole. Rinse the spinach in water, then place in a plastic bowl. Microwave for 1 min until wilted.
Halve the tomato horizontally, then half each piece again. Cut the sausages in half. Divide the spinach between the four holes in the tray, then add a piece of tomato and 2 pieces of sausage to each. Place the tray in the oven for 5 mins.
In the meantime, in a large jug, whisk together the Worcester sauce, plain flour, milk and eggs, then season with pepper. Keep whisking together until very smooth. Open the oven door, pull out the oven shelf with the tray on it using oven gloves and pour equal amounts of the batter mixture into each hole. Return the oven shelf and close the door. Bake for 15 mins until the toads in the hole have risen and the sausage is cooked through. Allow to cool, then serve.
