Vanilla hot chocolate
Serves 2
1 tsp vanilla bean paste
50g white chocolate, broken into pieces
250ml whole milk
½ tsp honey, optional large marshmallows, to decorate
cocoa powder, for dusting
2 vanilla pods, to decorate
Place the chocolate pieces in a jug. Microwave for 1-1½ mins until the chocolate can be stirred into a smooth paste. Whisk in 2 tbsp of the milk, then whisk in the rest of the milk into the jug. Mix in the vanilla bean paste. Microwave for 1 min until hot, then whisk for 1 min until frothy. Divide the hot chocolate between two cups. If extra sweetness is required, add ½ tsp of honey.
Skewer 1 large marshmallow, dusted with cocoa powder, on each of the vanilla pods to balance across the top of each cup before serving.
