How to cook and enjoy langoustin­es

Bring a pan of water to the boil. Add the langoustin­es and cover. Boil for 2-3 mins, then drain the water.

Detach the claws and crack the shell to extract the meat. Peel the tails and carefully remove the meat using the fingers and thumb.

Serve on a plate with lemon or garlic butter and fresh salad leaves.
