AS the competitio­n reaches the half-way point, it’s pastry week and the tasks are getting tougher.

Unsurprisi­ngly, the Signature challenge is to make Cornish pasties with a personalis­ed, decorative finish.

“We want crimping!” says Prue Leith. “I want to eat the best pasties I’ve ever had!”

Next for the technical challenge, Prue has set a tricky, sticky, rather retro patisserie task.

They must make three raspberry and three salted caramel eclairs. “The inside must be as perfect as the outside,” says Prue, who wants “high-end eclairs”.

High-end might not be how you’d describe some of the results, with liquid fillings and splodged-on toppings noted by Prue and Paul.

Finally, it’s the showstoppe­r – they must make a caged tart. “Why would you make a caged tart?” asks Marc.

It’s an excellent point. There are stressful moments as various pastry cages are removed delicately from moulds. Some survive, others just flake out…
